Because Real Bitches Know Beer
5 Stones Craft Brewing Co., based in Cibolo, just outside of San Antonio, is helmed by Seth Weatherly, a former homebrewer who decided to turn his hobby into a career.
As an avid craft beer fan, Weatherly recognized that many Texas breweries were already nailing the classic styles with their mainstay lineups, so he set out to do something a bit different.
“The guiding philosophy is really just to express our creativity through the beers that we are brewing,” Weatherly said. “While homebrewing I always found myself wanting to put a twist on standard recipes by adding natural produce and spices…[With 5 Stones Craft Brewing Co.] I wanted to brew “in season” and offerings would come and go as the months ticked by instead of having a “flagship” beer. Hopefully this would keep something new and fresh for our customers.”
Well, new and fresh they are. With current offerings ranging from the Aloha Piña, a Golden Ale brewed with fresh cut pineapple and roasted jalapeño, to Rhubarb Cherrylicious, an American Wheat brewed with fresh Rhurbarb and Cherries, 5 Stones has crafted an ever-changing lineup of truly unique brews, all made without the use of extracts or syrups.
“We sincerely hope that our customers know that it matters to us what we use and how we do things,” Weatherly said.
The brewery plans to release around four offerings per season. (#InsiderTip, Sleepy Hollow, a smoked pumpkin ale will be in the mix for autumn.)
5 Stones is currently operating out of a three-barrel brewhouse, with plans for expansion in the not-so-distant future.
“My hope is to expand within a year into a 15 BBL system and a new location where it would be more conducive to having a tasting room and better overall place to host events,” Weatherly said. “My whole thought is the 3 BBL system would serve as a platform to see if my brand [and] philosophy would be embraced by our local market.”
Packaged in 750ml bottles, 5 Stones beers are currently available at all San Antonio area Specs locations, as well some Gabriels and Twin Liquors locations, with new San Antonio and New Braunfels accounts popping up weekly. The beer will making it’s arrival at select Austin stores very soon.
